Mogens Bay Esbensen new article content ... Mogens Bay Esbensen (born 1930) is a prominent Danish born chef and author widely credited with introducing Thai cuisine and ingredients to Australia[1], and is considered a pioneer of Modern Australian cuisine[2]. He operated La Causerie, Pavillion on the Park, Butler's[3] and The Old Bank[4] restaurants in Sydney and Nautilus in Cairns[5]. He now lives on the island of Læsø halfway between Sweden and Denmark[6].
